Blue Veins

Its distinctive feature is the rich blue-green veining that marbles the firm texture of the cheese. Veining is due to the use of Penicillium and rennet and to the processing and ripening stages – two sensitive steps, when manual skills are crucial.

Gorgonzola is a cheese that is best tasted with pickled fruit mustard or red onion jelly, accompanied by a full-bodied red wine or a sweet fortified one.

Gorgonzola is among “naturally lactose free cheeses*”, thanks to the presence of lactic bacteria, which, during fermentation, metabolize this sugar naturally present in milk.

The Penicillium used for Gorgonzola is gluten free certified. AIC (Associazione Italiana Celiachia, the Italian Coeliac Society) has included Gorgonzola in the list of cheeses suitable for people suffering from this disease.
